Many thanks for your detailed report, it seems you start liking the EVO after all 
With your length (I’m 1,89m btw) I’d anyway at least try the upper seat pin position; you won’t loose comfort but win with more pressure on the pedals.
Also I’d highly recommend to install the bent steering to avoid knee-bar collisions.
Fortunately you’re obviously in/from Germany; the main distributors stock in your country is very well sorted and moreover that actually huge 
Unfortunately don’t know many customers about that - mentioned parts stock is not accessible for the public (for dealers only). 
So - the parts availability, at least for Germans - will depend strongly on the support willingness of your local dealer…
